I love making a hearty, comforting soup about once a week. I love this recipe for a few reasons; 1. It’s a simple, one-pot meal, 2. it’s an inexpensive way to eat clean, 3. it has the nourishment of cabbage which I classify as a superfood…and possibly the cheapest superfood!.
This one makes a huge batch of soup so you can save some in the fridge to have for lunches or even supper for a couple days and store some for the freezer. Bring out in the morning to eat for lunch or supper that day.
